Easy Taco Soup

1 pound ground turkey or beef (optional)
1 large onion, diced
1 16 oz can kidney beans, drained and rinsed
1 16 oz can garbanzo beans, drained and rinsed
1 16 oz can other beans, drained and rinsed
2 14.5 oz cans diced tomatoes, undrained
1 16 oz can whole kernel corn, undrained
3 ½ T taco seasoning

In large soup pot, brown ground turkey and onion (or just saute onion if leaving out the meat). Add remaining ingredients and simmer uncovered for 30 minutes. Serve on its own, or with toppings such as corn chips, guacamole, cheese, and sour cream.

I use cooked dry beans rather than canned (it's a lot cheaper). Substitute about 1 1/2 to 1 2/3 cup cooked, drained beans for each can.

note for next time - try adding spinach - last 5 minutes of cooking
