Barley Biscuits

I originally made these so I could have bread crumbs for other recipes, but we all got hooked.

2 c barley flour
1 1/2 t baking powder
1/4 t salt
1 1/3 c water
1 T oil

Mix flour, baking powder and salt. In a separate bowl, combine water and oil. Stir into the flour mixture. Drop by heaping tablespoons (or use a cookie scoop) onto an oiled baking sheet. Bake 10-12 minutes at 425.

Water or flour may need to be added to reach a good consistency. Different coarseness of flour will require more or less water - i.e., coarser barley flour needs less water. Watch how much the dough flattens when dropped on the baking sheet. If it doesn't change shape at all, add more water to avoid dense biscuits. If it flattens too much, add flour.
