2 c spelt flour
1 t baking soda
1 1/2 t baking powder
1 t salt
2-3 t cinnamon
1 t vanilla
1 c honey or agave
1/2 c oil
2 c applesauce
Combine first five ingredients in a large bowl. Add remaining ingredients and mix well. Pour into greased 9x13 pan and bake at 350 for 35-40 minutes. Top with cool whip or other appropriate frosting, or serve with ice cream.
